The Perfect Meal for Summer 

During the summer, I enjoy eating cool and light meals. Eating heavy foods in the heat tends to slow me down even more. Combine these dishes together for a healthy and refreshing meal that can be served as lunch or dinner.

Iced Green Tea with Honey

  • Brew your preferred Green Tea (bonus if it is mixed with Jasmine Tea) it can be a loose-leaf or not.

  • Mix in honey (according to how sweet you would like your tea) while it is still hot.

  • Place in the refrigerator until cool.

  • Add ice and enjoy a refreshing and healthy beverage.

Salmon with Chickpea Rotini 

Banza is my preferred brand of chickpea pasta. It leaves me feeling less bloated than regular pasta and is loaded with protein. For this recipe, I like to use their rotini and add salt, butter, and garlic powder.

I understand most recipes make Salmon with a lot of steps, but as I said, these are simple!

  • Place olive oil on a pan/over fish.

  • Add thawed or fresh Salmon.

  • Sprinkle lightly with salt.

  • Place in oven for about 20 minutes at 375 degrees.

  • Remove and add a few squirts of refreshing lemon.

  • Serve alongside pasta.

Cucumber Tomato Salad

  • This recipe is the easiest and most refreshing of them all.

  • Slice several cucumbers into quarters and halve cherry tomatoes.

  • Add a pinch of salt, pepper, and drizzle with olive oil.

  • Sprinkle with basil

  • Let chill in the fridge until ready to serve.

Final Steps

  • Add the salad as a side and serve with green tea over ice.

  • Enjoy a delicious and refreshing meal.
